Chimichurri Chicken Salad

This Chimichurri Chicken Salad is low carb, high protein and paleo (when dairy free). Switch out the tomatoes for cucumbers for those who need to avoid nightshades.

Prepare Ahead

One of the best ways you can ensure you are eating well is to plan your meals ahead. Spend a little time on a Sunday cooking up some protein, making a dressing and chopping up some salad veggies. You will have healthy lunches all week!

This salad makes 4 serves.

Balanced Blood Sugar

The high amounts of protein and fat, and low amounts of carbohydrate (and all low GI carbohydrates) make this a good option for maintaining stable blood sugar.

Chimichurri Chicken Salad Recipe

Ingredients

1⁄2 cup chimichurri sauce

4 skinless chicken thighs

1 tbsp. olive oil

1 head of cos lettuce, chopped

2 tomatoes, sliced

1⁄2 red onion, sliced

2 avocados, sliced

handful fresh parsley, to serve

Chimichurri Sauce

1⁄2 cup (120ml) olive oil

2 tbsp. red wine vinegar

1⁄2 cup (12g) fresh parsley,chopped

2 cloves garlic, chopped

2 red chillies, deseeded, chopped

3⁄4 tsp. dried oregano

1 tsp. salt

How to make your healthy chicken salad

Make your chimichurri sauce by placing all the ingredients into a food processor or high-speed blender and pulse to form a thick sauce. ( You can store this in an airtight container in the refrigerator for up to 2 weeks or freeze it!)

Place 4 tablespoons of the chimichurri sauce into a zip-loc bag along with the chicken thighs. Set aside to marinate for 20 minutes. Keep the remaining sauce to use as a dressing.

Heat the olive oil in a frypan (or use your air fryer) over medium-high heat and cook the chicken thighs for 4-5 minutes each side until golden and cooked through. Slice the cooked chicken into strips.

Arrange the lettuce leaves, tomatoes, onion and avocado on a platter and top with the chicken thighs. Drizzle over with the remaining chimichurri sauce. Garnish with parsley leaves to serve.

To prep in advance, store the dressing separately and add just before you eat it!
