Baby Food Recipe - Healthy Hemp, Apple and Zucchini Muffins

If you’re after a simple baby food recipe that’s packed with protein and plenty of hidden vegetables, this one’s for you. These muffins are suitable for baby’s from 10 months of age. Make a batch so you and baby can enjoy these as a healthy sweet treat or quick breakfast throughout the week.

Ingredients

  • 2 cups wholemeal flour, or gluten free alternative such as almond, buckwheat flour or ground oats

  • 2 large eggs

  • 1⁄2 cup butter or coconut oil, melted

  • 2 tsp. cinnamon

  • 2 tsp. baking powder

  • 2 tbsp. hemp seeds

  • 2 tsp. pure vanilla extract

  • 1⁄2 cup coconut sugar, or other sweetener

  • 1 1⁄2 cup zucchini (approx. 1 large zucchini), grated and excess moisture squeezed out

  • 1 cup apple, (approx. 1 medium apple), grated

Healthy Muffins

Great for Lunchboxes!

  1. Preheat the oven to 180C. Grease or line a 12 cup muffin tray.

  2. In a food processor, place the eggs, flour, butter, cinnamon, baking powder, hemp seeds, vanilla extract, coconut sugar and half the amount of the grated zucchini and apple.

  3. Blend on high for approximately 1 - 2 minutes or until a smooth batter forms.

  4. Add the remaining grated zucchini and gently pulse to mix to combine.

  5. Pour the batter into the muffin cups, dividing it evenly between the 12 cups. Sprinkle extra hemp seeds on top if you wish.

  6. Bake for about 30 - 35 minutes or until a toothpick or fork comes out clean.

  7. Remove the muffin tin and allow them to cool before serving.

After some extra protein? Simply add a scoop of some pea protein powder! I like to also serve with a spread of butter, avocado, or my favourite nut butter for some added healthy fats.
